Today was a rare occasion where I was home for lunch on a weekend.  Here is a yummy, simple and healthy meal: quinoa, black beans, and avocado.  I made extra for an easy Monday lunch.

There are many benefits to eating avocado including vitamin E for healthy hair and skin.  Avocados contain roughly 3g (per serving) of monounsaturated fat (the good kind), which can help lower your  LDL cholesterol (the bad kind).

An important B vitamin in avocados is folate, which promotes healthy cell and tissue development.  This is especially important for sexually active females, whether you are trying to conceive or not, folate will help ensure rapid cell division and growth for proper fetal development.

We all know bananas contain potassium but avocados also have their fair share of the electrolyte necessary for muscle growth.
